The roots in the earth

María Serra comes from a family that has been involved in the DO Binissalem wines produced. Even as a child, she spent most of her time in the fields, helping her grandparents and discovering her love for the vines. "Things used to be modest here," María remembers. "Small vines, no big fuss. It's different today, but the connection to the earth remains." And that is precisely what sets María apart from the many new winegrowers working on the island - for her, wine is more than just a product, it is a tradition.

Viticulture in transition

When she took over the management of the family winery a few years ago, María was faced with the challenge of finding a balance between tradition and innovation. The Binissalem region, which has been under the protected designation of origin Denominació d'Origen (DO) has invested heavily in recent years to integrate modern techniques into viticulture without abandoning the original grape varieties and methods. Manto Negro and Prensal Blanc - two of the most important autochthonous grape varieties - are now the hallmark of the region.

Sustainability as a matter close to our hearts

But María is not just a steward of tradition. She has set the winery on a sustainable course that is geared towards the requirements of the future. Water-saving techniques, the avoidance of chemical pesticides and the protection of the soil are at the heart of her work. "We've taken so much from this earth," says María, "now it's time to give something back." A celebration of the earth: the grape harvest
